Wine gums were the favorite candy of Roald Dahl, author of Charlie and the Chocolate Factory. He kept a jar of the sweets next to his bed so he could savor them ...

Gum: Encyclopedia II - Locust bean gum - Functionality

Locust bean gum is less soluble and lower viscosity than guar gum as it has fewer galactose branchpoints. It needs heating to dissolve but is soluble in hot water. Locust bean gum differs from guar gum in that it does form thermally-irreversible weak gels by association of the galactose deficient regions and therefore has poorer freeze thaw behavior. These unsubstituted areas also allow increased interaction with cellulose. Being non-ionic, locust bean gum is not affected by ionic strength or pH but wi ...

Oddly, the connection between Sudan and Osama bin Laden brought the otherwise undistinguished gum to public consciousness in 2001, as an urban legend arose that bin Laden owned a significant fraction of the gum arabic production in Sudan, and that therefore one should boycott products using it. As a result some food producers, for instance Snapple, renamed the ingredient "gum acacia" on their labels. This story took on somewhat significant proportions, mostly thanks to an article in The Daily Telegraph a few days after the September 1 ...
