Dos Equis: Encyclopedia II - Pilsener - Origin

Until the 1840s, most of Czech beers were top-fermented, dark and cloudy, although Bavarian brewers had begun experimenting through "lagering" beer in cool caves using bottom-fermenting yeasts, which improved the beer's clarity, flavour, and shelf-life. Ironically, they got a lot of knowledge from a book printed in 1794 (in German, 1801 in Czech) and written by famous Brno brewer František Ondřej Poupě. The Mešťanský Pivovar (Burgess Brewery) recruited the Bavarian brewer Josef Groll (1813 – 1887) who, using new ...

Dos Equis: Encyclopedia II - Monterrey - History

In the mid 1500s, the area was unexplored by the Spanish and known as Extremadura Valley. Several unsuccessful expeditions led by Alberto del Canto had tried to colonize the area. An expedition led by Luis Carvajal y de la Cueva established a settlement in the area called San Luis Re di Francia but was frustrated by the Inquisition and the persecution of the Sephardim among the colonists. A third expedition of twelve families led by Diego de Montemayor founded Ciudad Metropolitana de Nuestra Señora de Monterrey (Metropolitan City of Our Lad ...

Dos Equis: Encyclopedia II - Lager - History

In the nineteenth century Bavarian brewers used to store their beer in cool places such as caves to mature it. They called the beer they obtained "Lagerbier", from the German lagern ("to store"). During the centuries Bavarian brewers developed a special kind of yeast in order to mature their cold-matured beer. The most apparent difference between ales and "lagers" is that "lagers" use bottom-fermenting yeast. As the name implies the yeast settles to the base of the fermentation vessel. However, the most common modern fermentation system is the cylindro-conical tank where the distinction between the different flotation characteristics ...

The invention of modern refrigeration by Carl von Linde removed the need for caves in which to store the beer, however even until recently the Pilsner Urquell brewery still fermented their beer using open barrels in the cellars underneath their brewery. This technology was changed in 1993 since large cylindrical tanks are used, however small sample is still brewed in a traditional way for the comparsion of the taste. They also have the unique cl ...

Dos Equis: Encyclopedia II - Lager - Brewing technique

Bottom fermented beers are brewed principally from malted barley, hops and water at low temperatures. "Lager" yeast, known as Saccharomyces uvarum or Saccharomyces carlsbergensis, ferments at these cool temperatures, and flocculates (forms a cloudy mass) on the bottom of the vat. "Lager" yeast is a bottom-fermenting yeast, and typically undergoes primary fermentation at 7-12°C (45-55°F) (the "fermentation phase"), and then is given a long secondary fermentation at 0-4°C (30-40°F) (the "lagering phase"). During ...
