Cornish pasty: Encyclopedia II - Cornish pasty - History

By the 1800s the pasty had evolved to meet the needs of tin miners, as tin mining was a major Cornish industry at the time. Tradition claims that it was originally made as lunch ('croust' in the Cornish language) for Cornish miners who were unable to return to the surface to eat. The story goes that, covered in dirt from head to foot (possibly including some arsenic often found with tin), they could hold the pasty by the folded crust and eat the rest of the pasty without touching it, discarding the dirty pastry. The pastry they threw away wa ...

A Cornish pasty or Cornish pastie is a type of pie, originating in Cornwall, United Kingdom. It is an oven-cooked pastry case traditionally filled with diced meat—nowadays beef mince (ground beef) or steak—potato, onion and swede (rutabaga). Some pasties contain carrot but this is not part of the traditional recipe; the presence of carrot in a pasty is usually an indication of inferior quality. It has a semicircular shape, caused by folding a circular pastry sheet over the filling. One edge is crimped to form a seal. In Devon, a Devon Pasty is very similar but the cr ...

They are famed miners and smiths although, like humans, they specialize in any number of trades. Generally shorter than humans, ...

A pie is a baked dish, with a baked shell usually made of pastry that covers or completely contains a filling of meat, fish, vegetables, fruit, cheeses, creams, chocolate, custards, nuts, or other sweet or savoury ingredient. Pies can be either "one-crust," where the filling is placed in a dish and covered with a pastry/potato mash top before baking, or "two-crust," with the filling completely enclosed in the pastry shell. Some pies have only a bottom crust, generally if they have a sweet filling that does not require cooking. These b ...

Cornish pasty: Encyclopedia - Culture of the United Kingdom

The culture of the United Kingdom is rich and varied, and has been influential on culture on a worldwide scale. It is a European country, and has many cultural links with its former colonies, particularly those that use the English language (the Anglosphere). Considerable contributions to British culture have been made over the last half-century by immigrants from the Indian Subcontinent and the West Indies. While it can be argued that a common British identity still permeates society (though this is a contested and contentious assert ...

Cornish pasty: Encyclopedia II - British cuisine - Industrial-era foods

The Industrial Revolution that began in Britain in the 18th century is responsible for the former very poor reputation of British food. Unlike the populations of most other countries, by the mid 19th century the majority of the British population were working in city factories and living in very poor housing. The new working classes had lost contact with the land and the standard of cooking declined as a result. In the home, food was indeed frequently reduced to "meat and two veg", perhaps with stews and soups. The rationing of most f ...

Cornish pasty: Encyclopedia II - Butte Montana - History

Butte has been a mining town since its creation in the late 19th century, and at first only gold and silver were mined in the area. However, the advent of electricity caused a soaring demand for copper, which was abundant in the area. The small town soon became one of the most prosperous cities in the country, especially during World War I, and was often called "the Richest Hill on Earth". It is estimated that a third of all copper produced in the U.S. in the late 19th and early 20th centuries came from Butte. The city also attracted immigra ...

Cornish pasty: Encyclopedia II - Mince pie - Description

These small pies, usually between 2 and 3 inches in diameter (5 - 7.5 centimetres), can be made using either sweet shortcrust pastry or puff pastry. The origin of the word 'mincemeat' is often of interest, especially as it does not appear to contain any meat whatsoever. Up to Victorian times, the mince(meat) pie would have actually have been a spiced meat pie with some dried fruit. It has evolved to the point where the only meat in the pie is in the form of suet, an historical throwback. The filling is nowadays made from fruit minceme ...
